Karl Strauss' new staple is Mosaic (a hop that has been on the market since 2012 and is descended from Simcoe.
A single-hop session IPA with a strong citrus and bright tropical character.
It originates from a recipe devised by brewer Sean Albrecht (who also oversees the main brewery in downtown San Diego) and brewed as part of the small batch testing program Tank Tap.
Dry hopped twice, you can enjoy a burst of solid grapefruit aroma and citrus and tropical fruit flavors with a low alcohol content.
A generous dose of wheat provides a light mouthfeel and a crisp finish.
It's very easy to drink, and it's delicious to drink many cups.
Bronze medal winner at the 2014 Great American Beer Festival.

According to Thorn, the beer's name, Relay, represents the sequential introduction of Simcoe, Centennial, Amarillo, and Citra hops during brewing. It was made based on the recipe that was brewed at home by head brewer Eric O'Connell. This San Diego-style IPA has a pronounced hop character and is moderately malty and bitter. Hoppy flavors of passion fruit, tangerine, mango, pineapple and pine. It won a bronze medal at the 2019 LA International Beer Competition.

The beast from the jungle, Amarilla Gorilla IPA. While it is a big and beautiful hoppy IPA where you can fully enjoy the hop character, the perfect balance of malt and moderate bitterness make this IPA a very drinkable IPA. Fruity notes of mango, papaya and apricot are joined by citrus and pine aromas. The taste is as fruity as the aroma, with juicy pineapple and passion fruit, refreshing grapefruit and pineapple, and a slightly sweet melon-like fruity flavor, with a subtle sweetness like caramel and a pleasant hop-derived flavor. Bitterness coexists in a well-balanced manner. Medium bodied and smooth on the palate. It's a full cup with a solid drink, but it's an easy-to-drink finish.
