After crushing, the wine is infused with the seed for 2 hours. It is gently pressed to bring out the pale color and unique flavor. It is barrel fermented and aged in French barrels for about a year, then bottled in the summer of 2017 and aged in the bottle with the lees for about two and a half months. It is disgorged in January 2020 and the dosage is less than 4g/L. It will be released in the spring of 2020. This historic vineyard has been in operation for about 150 years since it was first cultivated in the heart of Sonoma Valley. Zinfandel is known as a rich red wine, but the specially selected old vines of Zinfandel have both a complex, deep flavor with low sugar content and a strong natural acidity. Instead of picking early, the grapes are harvested for this sparkling wine by looking at the balance of flavor and acidity. It is spicy and full of earthy minerals.

Technical information

Winemaking: The grapes are crushed by foot and then left to soak with the pits for 2 hours to bring out the individual flavours.

It is gently pressed and fermented using only natural yeast, then aged for about a year and a half in French barrels that have been used for several years. It is bottled in February 2020 and undergoes a secondary fermentation in the bottle, before being aged on the lees for about two and a half years.

Disgorgement will take place in July 2022, and dosage will be below 4g/litre.

Bedrock Vineyards

Located in the heart of Sonoma Valley, this 62-hectare historic vineyard was first owned, cultivated, and planted with vines in 1854 by Civil War commander General Sherman and Major General Hooker, and continues to exist to this day (approximately 150 years have passed since it was cultivated).

This is an important vineyard that the Peterson family acquired in 2005, and a total of 27 varieties of vines, including Zinfandel, Carignan, Mataro, and others, are planted in the red volcanic clay soil interspersed with rocks. For this sparkling wine, old Zinfandel vines were selected.

Zinfandel is known as a red wine with a rich fruit flavor, but the Zinfandel grapes from Bedrock Vineyard's specially selected old vines combine low sugar content, complex, deep flavor, and strong natural acidity.The grapes are harvested at the right time (rather than being picked too early) to achieve the perfect balance of flavor and acidity, and are picked for this sparkling wine.
