Technical information

Winemaking: Alder Spring's Pinot Noir is harvested at a low sugar content, but the taste of the wine never feels underripe, which is a major characteristic of the Pinots from this vineyard.

The grapes are crushed by stepping on them and then soaked with the seeds for two hours.

The pale colour and distinctive flavour are brought out.

It is gently pressed and fermented using only natural yeast, then aged for just under a year in French barrels that have been used for several years. It is then bottled in the fall of 2020, undergoing a secondary fermentation in the bottle and aged in the bottle for approximately two and a half months with the lees.

Disgorgement will take place in January 2022, with dosage below 4g/litre.

Release date: 2023.

Field Information

Alder Springs Vineyards

Located in the north of Mendocino County, in an area with few vineyards nearby, no one except owner Stuart Brewery thought that this location could produce quality grapes.

The winery has been supplying wine since 1993, and its vast 57-hectare vineyards have 85 plots with a wide variety of rootstocks, clones and varieties, reflecting the owner's preferences and his flexible personality that is willing to accept anything.

The region is located in a very cool mountainous area at an altitude of 520 to 820 meters, and although cultivation there is a constant challenge, the success is reflected in the grapes, which have low yields, excellent acidity, and strong characteristics that reflect the complex nature of the land (mineral texture) of each variety. These varieties have been recognized by discerning producers who procure the grapes from them.

Patz & Hall, Rees, Arnaud Roberts, Kessner, Agatha, Bedrock, Eric Roth, Caldwell, Carte Blanche, Y Rousseau Wines, Townley and more.

The owner, Stewart Brewery, was very supportive of Under the Wire's challenge and began growing Pinot Meunier in order to produce a special sparkling wine.

A few years later, California's first sparkling Pinot Meunier was born.
