That's why we keep the grapes on the vine for as long as possible, allowing them to ripen fully and develop their flavours before harvesting.
Upon arrival at our winery, the grapes are crushed and fermented until all sugar is removed.
The resulting wine is then passed through a special filter to preserve its flavor, slowly and gently extracting only the alcohol molecules, until we find the sweet spot in terms of flavor, mouthfeel and body.
