Our estate grapes are picked overnight at optimum ripeness and delivered to the winery early in the morning.
Upon arrival at the winery, the carefully selected grapes are carefully sorted, destemmed, crushed and then fermented in open-top fermenters.

Fermented for 10 days in stainless steel tanks, then aged for 12 months in French and American oak.

Vincent Cataler, a winemaker with genius tasting abilities, was born in France. After majoring in wine cultivation at university, he trained in winemaking in various countries. Since 2005, he has been working on winemaking with an international perspective in the United States.
