Nakamura says, "I imagined it more like a Daiginjo rather than a glassy Sauvignon Blanc. Rather than a sharp acidity, I wanted grapes that would give off a citrus, orange, or tropical flavor without being too extreme, and create a light yet profound wine."

Vintage Information
In contrast to the very difficult 2020 due to the wildfires, 2021 is a healthy and excellent vintage. Budbreak was a little late, but the weather was mild and dry throughout the growing season, allowing us to harvest fully ripe, powerful and rich grapes.
Technical information
Winemaking: Sauvignon Blanc is made using clone 1.
The high-quality juice obtained by whole-cluster pressing is fermented separately at low temperatures in stainless steel tanks (50%) and in barrels that have been used for several years (50%). The juice is then blended and bottled after 10 months of aging.
Tasting Comments
The aroma is dominated by lime, pear, grapefruit, and subtle hints of lychee and summer mandarin, with light notes of lemongrass, cumin, and pistachio also emerging.
When you put it in your mouth, the delicate citrus fruit flavor spreads throughout your mouth, transforming into a powerful aftertaste with fresh and soft acidity.
This is a Sauvignon Blanc that you can enjoy as its expression changes over time.
Field Information
This 6.9 hectare vineyard was established in 1990 and enjoys cool breezes off the Pacific Ocean that keep nighttime temperatures low.
The clay soil is considered ideal for Sauvignon Blanc (it contains a slightly redder clay content than the Gold Ridge soil typical of Russian River Valley, giving the vineyards a depth and richness in flavor), and the roots grow deep underground.
