After fermentation in stainless steel tanks, the wine is pressed and returned to the tank to complete fermentation (as it is not mixed with the skins until the end, it has a mild flavor). It is aged for about 4 to 6 months in barrels from France and the United States (new and used for several years). It has plenty of red nuances of juicy, ripe blueberries and strawberries, and soft tannins. It expresses the characteristics of Lodi's rich Zinfandel. It goes well with meat dishes in general, stews with red wine and demi-glace sauce, barbecue, and spicy dishes.
Technical information
Cultivation and Winemaking: The grapes are harvested from September 5th to October 15th, a little longer than usual, and fermented in stainless steel tanks for 7 to 9 days. They are then pressed and returned to the tanks to complete the fermentation process (the grapes are not mixed with the skins until the end, resulting in a mild flavor).
It is then aged for approximately 4 to 6 months in tanks made from French and American barrel wood.
