The first release of a premium reserve wine. Harvested from organically certified fields in Lodi (Lodi Rules) from August to October, various cuvées are blended. Pressed and returned to tanks to complete fermentation (not mixed with skins until the end, resulting in a mild flavor). Aged for about 4-6 months in French and American barrels (new and used for several years). Vibrant and rich aromas of dark cherry, coffee, and cassis continue. Juicy black fruit, creamy mouthfeel, mellow tannins, and hints of mocha and coffee are impressive. Goes well with meat dishes, steaks, yakiniku, and barbecues.

Technical information

Cultivation and brewing: Harvested in September or October when fully ripe, fermented in stainless steel tanks for 7 to 9 days, pressed, and returned to the stainless steel tanks to complete fermentation (the wine is not mixed with the skins until the end, resulting in a mellow flavor).

Various cuvées are blended and aged for 4 to 6 months in French and American barrels (both new and several years old).

Tasting Comments

Bright, rich aromas of dark cherry, coffee and cassis ensue.

It features juicy black fruits, a creamy mouthfeel, mellow tannins, and a lingering hint of mocha and coffee.

Food compatibility: Goes well with meat dishes in general, steaks, yakiniku, and barbecues.
