The vines are 30 years old, facing east, and hand-harvested. After whole-cluster pressing, the grapes are fermented in barrels for 1 to 5 years and aged for 12 months. The grapes are transferred to tanks and left to settle for 3 months, then lightly filtered before bottling. Les Terres de Filendré is a négociant brand made by David Dubin, one of the best winemakers in Burgundy, with the same philosophy and quality as his own domaine, and made from 100% purchased grapes. In order to challenge terroirs other than David Dubin's home base of the Côte de Nuits, he decided to create a separate brand. The name Filendré comes from the birth of two little angels, Philomène and Léandre, on December 16, 2010. The grapes he purchases meet David Dubin's strict requirements, and he buys only those that he is satisfied with after observing the work of the growers. There are no special contracts with the growers, but they maintain a relationship of trust, and are able to continuously purchase grapes of excellent quality. Although they are not involved in the field work, they harvest by themselves, choosing the optimal timing. The grapes are grown organically and are lutte raisonnée. He started purchasing grapes from Savigny-les-Beaune from the 2019 vintage, and is still considering purchasing new areas if he can obtain grapes of the quality he desires. This is the first time that the 2020 vintage has been imported to Japan.
