COMMENT
Julien Schaal is a winery located in the village of Saint-Hippolyte, just below the Château de Haut-Koenigsbourg, one of the tourist attractions in Alsace, at the foot of the Vosges Mountains. Julien Schaal, the owner of the winery, makes wine in tandem with his wife Sophie, who is also a winemaker.
Julien first made his own wine in 2003 when he went to help with the harvest in the Cape Province of South Africa. He noticed the potential of the cool climate of the highlands and made a high-quality, delicately flavored Chardonnay that took advantage of the climate, which earned him high praise. He then began making his own wine in Alsace in 2011. For Julien, who is committed to organic wine, Alsace, like South Africa, was the ideal place.
The Grand Cru "Schönenbourg" vineyard in the village of Riquewihr faces south and has layers of gypsum spread out like stripes on the marl soil. The gypsum is brittle and easily cracks, so the vines can take root between them. The Riesling grown in this plot produces wines with a unique and pleasant bitterness.
WINEMAKING
After hand-picking, the grapes are pressed slowly. Fermented with only natural yeast. Aged in stainless steel tanks before bottling.
