COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
The vines are from several plots in the village of Chassagne-Montrachet, with an average age of 60 years.
WINEMAKING
100% destemmed. Fermented in stainless steel tanks using natural yeast. Aged for 12 months in wooden barrels (30% new barrels) and then 6 months in stainless steel tanks.
