COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
This plot is located in the northern part of the AOC. It is rich in iron and produces high-quality red wines. Pillo produces both red and white wines from this plot.
WINEMAKING
Only 50% of the stems are removed. Fermented in stainless steel tanks using natural yeast. Aged for 12 months in wooden barrels (30% new barrels) and then 6 months in stainless steel tanks.
