COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
This wine is a luxurious Burgundy Rouge made using Pinot Noir from the villages of Santenay and Chassagne-Montrachet. It features fresh red fruit flavors and smooth tannins, and can be enjoyed right now.
WINEMAKING
After 100% destemming, it is fermented in stainless steel tanks using natural yeast. It is aged in wooden barrels (no new barrels) for 12 months, and then aged in stainless steel tanks for 3 months.
