Only 14 special vineyards in the center of Seven Springs Vineyard are used, and the entire terroir of this vineyard is felt. Summum means "the greatest" in Latin, and is a fitting name for this wine. This special wine is energetic and pure, with a noble image brought about by volcanic soil and basalt. The grapes used for Summum are made from 14 vineyards, which is the essence of Seven Springs. It is located on hills formed by ancient volcanic activity and has soil rich in minerals. "Evening Land" is a symbol of the perfect garden that continues to be explored. From the time of Greek mythology to the present day, Evening Land is synonymous with adventure and romance, which inevitably leads to the West Coast of America. Seven Springs Vineyards, located in the Eola-Amity Hills in Oregon's Willamette Valley, grows 80 acres of Pinot Noir, Chardonnay, and Gamay Noir. Owned entirely by Evening Land, the vineyard is known as one of Oregon's leading vineyards, and has been selected as one of the top 10 vineyards in the United States by Food & Wine magazine. It is also a special vineyard that is described by Wine Advocate magazine as "one of Oregon's best vineyards, producing grapes of consistent quality every year." Seven Springs, located on an east-facing slope, was planted in 1983 and the soil is Oregon's typical volcanic red soil. The ratio of young and old vines is very well balanced, and the plots with various microclimates produce a wide variety of grapes. Seven Springs produces a complete estate wine from its own biodynamic vineyards. When Evening Land was first established, it was known as the first overseas winemaking project by Dominique Lafon of Comtes Lafon, a great Burgundy Mursault producer and one of the top five white wine producers in the world. Currently, Evening Land is managed and brewed by Raja Parr, an entrepreneur who heads the popular winery Domaine de la Cote in Santa Rita Hills, California, and talented winemaker Sashi Moorman. Due to their influence, the wines have become very European in style, and it is no exaggeration to say that it is now the most popular winery in Oregon.
