Golden in color, with sweet aromas of pineapple, mango, peach, and apricot.
This is a wine with a plump mouthfeel, freshness, a good balance of fruit and complexity from ripening, and a pleasant aftertaste.
Soil: Sedimentary layer of sandy loam.
The soil is slightly acidic (pH 6.3), low in organic matter (2%), and low in salinity.
Fertility and moisture are moderate.
During the 2016-2017 growing season, after heavy rain during the winter months of June and July, there was little rain in the spring, but the area suffered from severe frost damage in early spring.
Temperatures rose sharply in the latter half of spring, and the high temperatures continued into summer, and the mild weather continued until the winter of April.
Due to the high temperatures this spring, the harvest was a month earlier than usual.
The grapes are harvested at night when the temperature is low and are transported to the winery in small 12kg boxes to avoid crushing, where they are quickly cooled down.
The grapes are placed on a conveyor belt for sorting, then placed in a pneumatic whole bunch press for gentle and careful pressing.
The juice is transferred to stainless steel tanks and alcoholic fermentation begins.
Before fermentation is complete, all wine is transferred to French oak barrels to finish fermentation.
After fermentation is complete, a small amount of SO2 is added to prevent malolactic fermentation and maintain the original acidity and freshness.
The wine is then aged for five months in a batonnage, which imparts fullness, aroma and complexity to the wine.
Before bottling, it is cleared with bentonite and cold stabilized to remove tartar.

Signos de Origen focuses on the grapes of Casablanca, which has a cool climate, and bottles the characteristics of the varieties grown there.
Grapes that grow slowly in cool climates are treasure-like grapes that are rich in acid and store many aromas.
