Pale yellow with a slight golden hue. The aroma of white fruits and apricots is dominated by citrus and spice notes. The taste is medium-bodied, with a creamy texture from aging on the lees and a crisp acidity, resulting in both a fresh and long-lasting finish. It goes well with raw seafood such as oysters and salmon tartare, creamy vegetable risotto, cheeses and pates. Derived from weathered granite and colluvium, part of the coastal mountain range. The soils of blocks 21, 29 and 19 are deep, with a low clay content, sandy loam, and slightly acidic (pH 6.1-6.3). The soils of block 25 are dominated by red clay soil in the upper layers, with low organic matter (1.7%), medium fertility and low salinity. The Valle Casablanca is influenced by the Humboldt Current of the Pacific Ocean. Mornings tend to be cloudy throughout the year, and the average temperature is mild with few sudden changes in temperature. The 2020-2021 season began with a cold and rainy winter (230 mm), followed by a cold spring with frost, which affected the production of Chardonnay in particular. The low average temperatures in spring and summer, and the unexpected rain in January, caused the ripening to proceed more slowly than usual. For these reasons, the harvest also started slightly later than the previous year. The harvested grapes were transported to the winery in small boxes of 12 kg each to avoid crushing, and were immediately cooled. The grapes were placed on a conveyor belt and sorted, then put into a pneumatic whole-cluster press to be gently and carefully pressed. The must was then left to rest at a constant temperature for 1216 hours, and only the top layer of juice was transferred to small barrels, foudre barrels, and egg-shaped concrete tanks to wait for natural fermentation to begin with natural yeasts. After fermentation, the wine was aged in each container without racking until it was blended before bottling. Signos de Origin means "sign of the land".

Valle Casablanca, known as one of the coolest wine-producing regions in Chile, is an area close to the Pacific Ocean where the cold Humboldt Current flows. Signos de Origen focuses on the grapes of the cool Casablanca region and bottles the individuality of the varieties grown there. Grapes that grow slowly in the cool soil are rich in acidity and have accumulated many aromas, making them like treasures. And we are confident that the true individuality of the varieties can be expressed only by organic/biodynamic farming methods.
