DINING
It goes well with sauteed seafood, as well as white meat dishes such as sauteed or creamed chicken.
TASTING
It features flavors reminiscent of pear and pineapple, and the old Chardonnay vines give the wine a deep and complex flavor.
COMMENT
The Domaine Guerlain is currently run by Bastien, the fourth generation, who works with his father to create wine. The Domaine is located between the two steep rocky mountains of Solutré and Vergisson. The area near the rocky mountains is geologically very old soil, and fossils of ancient marine life have been found in the fields.
Guerlain owns 35 different parcels (plots) of vineyards across three appellations, and the grapes from each are picked separately before being vinified and blended carefully to take into account the characteristics of each vineyard.
WINEMAKING
After the grapes are harvested by hand, the juice is gently squeezed out with an air press. The primary fermentation takes place in a stainless steel tank, and then the wine is aged for 10 to 12 months in oak barrels that have been used for 5 years (15% new barrels). The aging barrels are 228L and 400L wooden barrels.
