WINEMAKING
As the name of the cuvée "L'Ancien" (old), suggests, it uses Gamay from vines over 50 years old. It is made using traditional Burgundy methods. The grapes are completely destemmed and slowly fermented in concrete tanks for 4 weeks. It is then aged in the concrete tanks.
