DINING
Pair with beef rib steak, sukiyaki, beef stewed in red wine, and hamburger. For cheese, it goes well with soft types of white mold or washed cheese.
TASTING
Aromas of violets, cassis and black cherries. Smooth tannins, silky mouthfeel of ripe Merlot and good acidity make this Bordeaux as delicate as Burgundy.
COMMENT
This chateau has been a member of the Bordeaux official classification "Cru Artisans" since 2006. "Cru Artisans" is a group of small producers who are family-run, from cultivation to brewing and sales. They handcraft Bordeaux wines that are full of the individuality of the maker, using artisanal techniques.
Chateau Micaret is a small family-run producer on the left bank of Bordeaux. Currently, brothers Damien and Dominique are in charge of the wine. Since 2004, they have been using organic farming methods, and are now influencing other winemakers as pioneers of organic farming among the "Cru Artisans". This is a Merlot-based red wine that returns to the original traditional wines of the Médoc.
WINEMAKING
After hand-picking, the grapes are pressed with an old-fashioned press. They are slowly fermented in stainless steel tanks using only wild yeast. They are first aged in stainless steel tanks for 6 months, then in French oak barrels for 12 months. 30% of the barrels are new.
