By blending two types of grapes, the wine has a concentrated aroma of citrus and tropical fruits, making it a wine that can be enjoyed every day. It goes well with seafood and snacks. Harvest: Pinot Grigio is harvested in early August, and Catarratto in late September. All the fruit is hand-picked at the perfect ripeness with a perfect level of acidity. The stems are removed and the wine is gently pressed. The wine is fermented for three weeks at a temperature controlled to not exceed 18°C, and no MLF is performed. Once the Catarratto fermentation is over, the two wines are blended and aged on the lees until December. Colpasso is a winery in western Sicily, with vineyards in Trapani province, where Marsala and Mazara are located. We are committed to using indigenous Italian varieties that have been rooted in the land since ancient times, and we fuse our cultivated knowledge with the latest technology that has been explored to create wines that express our "tradition". Colpasso means "one step to the top of the hill". It is a combination of the abbreviation of Collina, "Col," meaning "hill," and "Passo," meaning "step," and has two meanings. The company believes that "the best wine comes from the best vineyards, not from cellars," and produces grapes that retain the characteristics of indigenous varieties. They are committed to cultivating wines that respect nature, using almost no pesticides and avoiding human intervention, and make healthy, natural wines. In addition, they do not use any animal-derived ingredients in the brewing process, and the wines are "vegan certified," taking time and effort. They innovate while protecting "tradition," and deliver wines to the people "on the hill" who enjoy high-quality wines on a daily basis, once again conveying the appeal of indigenous varieties.

Colpasso's "One Step to the Hilltop" will continue to evolve, one step at a time, towards the summit and pass on its "tradition."
