Vines aged 15-20 years. Belice Agrigento, on the south coast of Sicily. Clay-limestone soil. Harvested around mid-September, all hand-picked. After 12 hours of skin contact, fermented in stainless steel tanks at 14-16°C. No MLF. Sur lie until late January. Colpasso is a winery in western Sicily, with vineyards in Trapani province, where Marsala and Mazara are located. They are committed to Italian indigenous varieties that have been rooted in the land since ancient times, and combine their cultivated knowledge and the latest technology that has been explored to create wines that express "tradition." Colpasso means "a step up the hill." It is a combination of the words "Col," an abbreviation of Collina, meaning "hill," and "Passo," meaning "a step," and has two meanings. They believe that "the best wine comes from the best vineyards, not from the cellars," and they make grapes that have the characteristics of indigenous varieties. They are committed to cultivating grapes in a way that respects nature, using almost no pesticides and avoiding human intervention to produce healthy, natural wines. In addition, they do not use any animal-derived ingredients in the brewing process, and the wines are "vegan certified" after a lot of time and effort. They innovate while preserving "tradition," and deliver wines to the people "on the hill" who enjoy fine wines on a daily basis, once again conveying the appeal of indigenous varieties.

Colpasso's "One Step to the Hilltop" will continue to evolve, one step at a time, towards the summit and pass on its "tradition."
