Colombaia is more than just a vineyard: it is an ecosystem where grapes, animals, vegetables and fruit all coexist and nourish each other.
Colombaia means "pigeon coop" and is a characteristic feature of this 16th century farmhouse, located on a hill about 220 metres above the town of Colle di Val d'Elsa.
The vines are planted 60km from the sea, on clay soils rich in ancient fossils.
The climate is also very special, with a sea breeze blowing over the vineyards every late afternoon, freshening the soil and the wine and giving it a slight salty flavour that enriches the wine's flavours.
The winemaking is done according to the year's vintage.
But some things remain constant.
It is naturally fermented using indigenous yeasts, is unfiltered, unfined and contains no additives whatsoever.
The ratio of grapes changes every year due to the weather, and the color of the label changes accordingly.
In other words, the colour of the label represents the vintage.
All grapes are hand harvested, destemmed and then transferred to tanks for a minimum of 10 days of maceration.
The juice is then pressed and transferred back to the tanks for fermentation.
Fermentation is carried out using only wild yeasts found on the grape skins, until all the sugar in the juice is converted into alcohol.
Throughout the entire process, no chemicals, sugar or yeast are added.
This wine is made only from grapes.
