DINING
Enjoy with grilled and roasted meats, stews and cheeses.

TASTING
In addition to the aroma of red and black fruits, eucalyptus and Mediterranean herbs, you can feel a slight oak aroma. In the mouth, it is full-bodied and the ripe tannins spread elegantly in a well-balanced manner.

COMMENT
Clos de Gatte is a winery established in 1998 in the Ayalon Valley in the Judean Hills region, located west of Jerusalem. Winemaker and owner Eyal Rothen built a house on this land after studying winemaking in Australia, planted grapes in the surrounding area, and established the winery. "Gat", which is included in the winery's name, means "press" in Hebrew.
They own 19 hectares of vineyards in the Ayalon Valley, with its gentle hills and valleys. The area is made up of shallow terra rossa (weathered brown limestone) topsoil on limestone bedrock, and has a unique microclimate. They keep yields to a low level of about 5,000 kg per hectare, and avoid as much human interference as possible in the winemaking process, adhering to traditional grape growing and winemaking methods.

WINEMAKING
Aged for 12 months in French oak barrels (30% new), racking every 4-6 months. Bottled unfiltered. No animal-derived ingredients are used in the fining agents, making it vegan-friendly.
