DINING
It complements pan-fried Saint-Jacques, pan-fried sea bass with beurre blanc, scallop risotto with truffles or mushrooms, carbonara, and Iberian pork. For Japanese food, try butter-fried scallops, grilled scallops (without the butter), crab miso, saikyo-yaki, shrimp shinjo with yuzu skin, and pork loin cutlet with lemon juice (Worcestershire sauce is too strong).
TASTING
It has the brioche, buttery and nutty aromas of aged Chardonnay, but also retains fresh fruit flavors. After 1-2 years, the creamy flavor will become even more pronounced.
COMMENT
This winery is based in the Vallée de la Marne, said to be the birthplace of Champagne. The Orban family began growing grapes and making Champagne in 1929, but in 2007 Francis Orban became independent and released his own Champagne. This Champagne makes the most of the quality of 100% Pinot Meunier.
WINEMAKING
The Chardonnay from the special plot "Les Makeras" in the village of Louvrigny, which is made of limestone soil, has a fresh and sharp taste. By adding 20% of the best Meunier carefully selected for the vintage, a wonderful depth of flavor is created. Aged in bottle for more than 72 months. This special cuvée can also be aged for 10 to 15 years.
