TASTING
Very aromatic. Refreshing and crisp fruitiness reminiscent of lime and mint. Creamy mouthfeel supported by abundant acidity. A natural and fresh wine.
COMMENT
"Birichino" was founded in 2008 by Alex Kraus and John Locke in Santa Cruz, California. "Birichino" means "naughty" in Italian, and their motto is "to make wines that have great aromas, balance, and a good sense of whimsy." They aim to make natural wines with as little artificial intervention as possible, and above all, they aim to make wines that will make people feel energized and happy when they drink them.
WINEMAKING
Harvested at night. Skin contact for 12 hours before pressing to maximize the aromatic potential. Two types of pressing, soft and hard, are used to achieve both elegance and rich texture. Cultured yeast harvested from Burgundy vineyards was used and the wine was fermented slowly at low temperature in stainless steel tanks for three months.
