Ashton Hills / Clare Valley Sparkling Shiraz 2013
The tannins make this wine particularly good for pairing with food and it can be enjoyed now or will develop further complexity with age.
Region: South Australia
Origin: Clare Valley
Variety: 100% Shiraz
Winemaking: This wine is made from low-yielding grapes in a dry region, half of which were planted in 1919. The base wine is aged for four years in old barrels and then fermented in bottle. After disgorgement, a rich fortified Shiraz liqueur is added to balance the wine's rich tannins.
Blackberries, black cherries, plums, and bright raspberry along with polished leather, Christmas cake spices, tar, and earth. On the mouth, dense, dark fruit and a wealth of fine tannins combine for a rich and textured effect. Savoury and maturation characters add layers to the palate. A remark-ably fresh finish for a wine this complex, concentrated and long.
