WINEMAKING
There are various types of Pinot des Charentes, but the Château d'Aurignac family mixes their own cognac into the wine (Merlot, Cabernet Sauvignon) during fermentation, stopping the fermentation (alcohol content: 18%) to create a vin de liqueur that retains the sweetness of the fruit. French law requires a minimum of one year of barrel aging, but Château d'Aurignac ages the wine in barrels for at least five years.
