Aromas of thistle, red currant, highland herbs and spices. A complex texture unfolds smoothly, and this wine has an excellent balance of elegance and depth.

Variety: 100% Pinot Noir
Vinification: 25% whole bunch fermented with natural yeast, aged for 10 months in French oak (20% new barrels). 75% destemmed, macerated for 7 days at low temperature to extract color and aroma. Stirred once a day for 5 days, then aged for 10 months in 1-4 year old medium toasted French oak (20% new barrels).
The flagship from Two Paddocks – an organically grown barrel selection from the estate properties. Maturation is in French barriques for 10 months, using a mix of older and new (20%) barrels.
