He particularly loves the flavor that makes the most of the soil characteristics, and he uses all the knowledge he has learned to determine the style of wine. The North Canterbury Pinot Noir harvested from hard limestone soil is destemmed, and the Pinot Noir used to blend with Waipara, which has a somewhat softer flavor, is whole-cluster fermented.
