This cuvée had a high VA (volatility) and a strong raspberry nuance. It has been five years since I started aging it, and the candy aroma has completely subsided and the taste has become much more mellow. It has been a long time since the last release. This wine is Shiraz harvested from the now-lost Shobbrook family's own vineyard. After harvest, it was fermented in a large concrete tank in the backyard of the family's house for four days of carbonic maceration, racked in a stainless steel tank, and further aged in old barrels. It has fruity flavors of cherry and raspberry, a slight gas texture, and an aftertaste of leaf mold and pepper.
