From multiple vineyards in the western Sonoma Coast, southern Sonoma Valley, and Russian River Valley. Stainless steel tank + barrel aging. By not using new barrels, the fruit flavor is preserved and the aroma of apples is reminiscent of nutmeg and cream. The silky texture spreads the flavor of fresh fennel, white peach and ripe apple. Refreshing yet solid taste.
Technical information
Vineyards: Grapes were harvested from multiple vineyards including the cool microclimate of western Carneros on the Sonoma Coast.
Vinification: After fermentation in temperature-controlled stainless steel tanks, a portion is aged on the lees in 500-liter barrels that have been used for several years, and the remainder in stainless steel tanks.
Tasting Comments
By not using new oak barrels, the wine retains its vibrant fruit flavor.
It has an elegant citrus aroma with hints of pineapple and white peach, and on the palate, the delicate flavors of quince, peach and plum spread along with the aroma, finishing with a pleasant acidity.
It pairs well with aged cheeses such as Gouda and Manchego, as well as delicate seafood, soups and pastas.
This flavor was achieved by combining modern technology such as low-temperature fermentation with traditional Burgundy wine aging techniques.
