It has a slightly cloudy dark purple color and a complex aroma of wild berries, pomegranate, herbs such as mint and shiso, and spices. The taste is dry with almost no sweetness of the fruit, and has a gentle broth-like flavor unique to Trousseau, prominent acidity, and firm tannins. It has a soft impression, but is dry and has a long finish. Béarg Ranch wines are the result of many years of research, visits to famous wine-producing areas overseas, and a lot of hard work. This biodynamic vineyard produces grapes that exceed expectations in every way. The mountainous soil and high altitude of this vineyard are ideal for this varietal native to the Alps. But more than the varietal's suitability to the terroir, it was the dedication, hard work, patience, and passion of the owner of this vineyard, Kelly Béarg's family, that allowed them to produce the grapes they wanted. Pax is a fresh family-run winery that started in 2000. The owners, Pax and Pam Marley, each dreamed of becoming a master sommelier. They studied hard every day, and met and fell in love at a study group with like-minded friends. Pax grew up in a family that had nothing to do with wine, and majored in art history at university. While working part-time at a restaurant and thinking about his future, he eventually became deeply interested in the history of the drink known as "wine." When the couple traveled to France to study wine, they were completely fascinated by the relationship between grapes, people, and the soil, and the culture of "wine" that is deeply rooted in Europe. In 1997, the couple moved to California and decided to make a living in the wine industry. After that, Pax was selected as the wine buyer for Dean & DeLuca, and based on his knowledge of European wine, he was inspired by another genre of drink, California wine. Among them, the most shocking thing for Pax was "Syrah". If California's Pauillac is Oakville and Pomerol is Carneros' Merlot, then he began to realize that there was no California Syrah comparable to Northern Rhone. Then in 2000, he started Pax Wine Cellars with the aim of making Syrah from vineyards that he felt had a fateful encounter with. What these vineyards have in common is that they are all in the cool environment of Sonoma County and Mendocino, and they can make full-bodied and delicately expressive wines. The Pax brand, which attacked the niche angle, gained momentum, and Pax and Pam started the Wind Gap brand in 2006 with investors. If Pax is a brand that specializes in Syrah and Rhone varieties, Wind Gap is a hip brand full of playfulness, releasing unfamiliar grape varieties such as Chardonnay and Pinot Noir as well as Trousseau Gris and Valdiguier. However, due to disagreements with investors, in 2018, he decided to leave the Wind Gap brand and focus on his own Pax brand. Currently, Pax produces mainly Syrah, which has a texture and freshness reminiscent of Northern Rhone, as well as rare varieties such as Trousseau Gris and Valdiguier, which he handled during his time at Wind Gap. The style is unmistakably "New California", and no pesticides or substances that do not exist in nature are put into the fields, and the wine is fermented naturally with indigenous yeasts and made naturally with minimal addition of sulfites.
