This model is a pure rice ginjo sake that is 100% French barrel fermented and aged for 10 months in barrels (25% new barrels). It has a flexible and thick mouthfeel, complexity, viscous acidity and a pleasant aftertaste. It has fruity aromas of lime, pear and apricot with a pleasant herbal aroma.

Vintage Information

In contrast to the very difficult 2020 due to the wildfires, 2021 is a healthy and excellent vintage. Budbreak was a little late, but the weather was mild and dry throughout the growing season, allowing us to harvest fully ripe, powerful and rich grapes.

Technical information

Clones: Dijon 95, Hyde, Wente

It is modeled after Junmai Ginjo sake.

Three clones are blended to achieve a supple yet full mouthfeel, complexity, viscous acidity and a pleasant aftertaste.

Clone 95 brings elegance to the wine, Wente brings a solid structure and clean acidity, and Hyde brings depth of flavor.

Winemaking and aging: 100% whole-cluster pressing, 100% barrel fermentation. Aged for 10 months in French barrels (25% new).

Malolactic fermentation is completed at 90% to retain acidity.

Tasting Comments

It has a pleasant aroma of fruits such as lime, apricot, apple, and pear, as well as herbs such as cardamom, tarragon, and basil.

It has a delicate texture, with citrus fruit flavors and hints of tropical fruit flavors that spread gently throughout the mouth.

The fresh acidity blends with the sensual fruitiness, and subtle aromas of honey, caramel and bay make for an even more complex and seductive finish.

Field Information

Green Acres was planted in 1969. The first vineyard acquired by the San Giacomo family.

San Giacomo Vineyards is a grape growing farm founded in 1969.

The estate owns several vineyards in Petaluma Gap, an area in the southern part of the Sonoma Coast where cool ocean mist and winds blow directly into through a gap in the coastal mountain range.

When I used to work at Artesa, we used grapes from San Giacomo.

Since then, he has become a big fan of the San Giacomo family and was eager to use their grapes when he launched Noria.

This Chardonnay is made from Chardonnay from the Green Acres and Palmer plots of Carneros Vineyards, owned by San Giacomo.
