Wolf Vineyard, the oldest vineyard in San Luis Obispo, Central Coast. The wine is transported to the Mount Eden winery in the Santa Cruz Mountains and brewed with the same delicate care. French and American barrels are used together (new barrels and barrels that have been used for several years). Barrel fermentation and barrel aging are about 10 months, with only half of the wine undergoing malolactic fermentation, and the other half leaving excellent acidity. A medium-bodied wine with a pleasant barrel flavor, luxurious tropical fruit flavor topped with citrus-like acidity, well-balanced, concentrated, and fresh aftertaste.

Vineyard: Wolf Vineyard (From the 2014 to 2017 vintage, Wolf Vineyard was the main vineyard, with Paragon Vineyard, Storer Vineyard, Biddle Vineyard, etc. blended, but in 2018, 2019, and 2020 it became a single vineyard.)
Winemaking and Fermentation: Grapes harvested between October 1st and 21st are transported to the Santa Cruz Mountains where the winery is located, and the winemaking method is almost the same as for Estate Chardonnay.
To avoid damage, the grapes are not crushed but are gently pressed to obtain healthy juice.
All of the wines are fermented in barrels (both French and American), using barrels that are two to five years old to complete malolactic fermentation.The wines are then aged on the lees for 10 months before being bottled.

Edna Valley is located in San Luis Obispo County on the Central Coast of California, and is strongly influenced by fog and winds from the cold Pacific Ocean, making it one of the longest growing seasons for grapes in the world.
Even when grapes from other regions in the same year are rich and ripe, the Pacific influence helps them retain crisp acidity.
On average, germination occurs in February and harvest usually occurs in October.
The Chardonnay ripens slowly, producing well-balanced fruit.
This wine is made from grapes grown in the 22 hectare Wolf Vineyard, cultivated by Jean-Pierre Wolf.
The vineyard is located in an idyllic setting in Edna Valley.
The vineyard was planted in 1976 by Edna Valley wine pioneer Andy McGregor, and purchased from McGregor in 1999 by Jean-Pierre Wolff.
It has been certified as an environmentally friendly farming method since 2008.
