DINING

TASTING
It has a bright pale yellow color and a transparent feel. It has the aroma of beautiful white flowers and ripe yellow fruits. It is fresh in the mouth and has the characteristic fumé scent of Silex. It has a lingering aftertaste of angelica (a candied butterbur sweet).
COMMENT
This is a long-established maison that has been in business since 1850 in Sancerre, a famous wine-producing region in the Loire region. The maison owns many vineyards with "silex" soil, where the best wines in Sancerre are made, and produces wines that can be aged for a long time, with an emphasis on terroir. The owner, Henri Bourgeois, is a big fan of Japan and has visited the country more than 60 times.
This historic hillside parcel was called "Roshtom" during the Gallo-Roman period. The silex covering the topsoil stores heat during the day and protects the grapes from the cold at night, promoting their growth. This is a rich and well-balanced Sancerre.
WINEMAKING
After hand-picking, the grapes are débourbage at low temperature. Fermentation is carried out using natural yeasts and temperature control, with 50% in stainless steel tanks and 50% in wooden barrels. No malolactic fermentation is carried out. After 11 months of aging, the wine is bottled and left to rest for another 9 months before being shipped.
