COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
This wine is made from old vines with an average age of 80 years, grown on an east-facing slope near Saint-Aubin. The topsoil is shallow and suitable for growing Chardonnay.
WINEMAKING
Pressed with whole bunches. Fermented in wooden barrels (30% new barrels) using natural yeast. Aged in wooden barrels for 15 months, then aged in stainless steel tanks for 3 months.
