COMMENT
This winery is a descendant of the prestigious Pillon family, which represents Chassagne-Montrachet. They also own prestigious vineyards in Puligny and Meursault. Currently, under the young fifth-generation owner Antonin, they are beautifully expressing the complexity of the terroir in the southern Côte de Beaune.
This plot is located in the northern part of the AOC. The average age of the vines is 50 years, which produces wines with a more delicate flavor. Pillon produces both red and white wines from this plot.
WINEMAKING
Pressed with whole bunches. Fermented in wooden barrels (30% new barrels) using natural yeast. Aged in wooden barrels for 12 months, then in stainless steel tanks for 6 months.
