TASTING
Aromas of cassis, cedar, spices and cocoa are complemented by rich, persistent flavours of ripe fruit, chocolate and anise, with well-balanced, velvety tannins.
COMMENT
Hall Ranch is a winery located in Paso Robles, California, established in the early 1990s by the Hall family. The winery owns 150 acres of vineyards (approximately the size of 13 Tokyo Domes) and produces award-winning wines.
The winery's philosophy is to continue to produce wines that preserve and showcase the Old West cowboy culture, pioneer spirit, and agricultural roots that permeate the Paso Robles way of life. There are more than 30 soil types in the Paso Robles AVA, but Hall Ranch's vineyards are on calcareous soils. The soil's high pH of 7.4-8.6 is iconic, as it is not found in any other wine-growing region in California. The vineyards are farmed using sustainable farming methods.
WINEMAKING
The wine is made primarily from Cabernet Sauvignon, harvested in the warm, sunny regions of Paso Robles, fermented in stainless steel tanks and aged for 18 months in a combination of Eastern European and American oak.
