The aromas of red pear, dates, star anise, and blue hyacinth flowers are a perfect expression of the laid-back wine country of Paso Robles. Complex flavors of nutmeg, rosemary, cranberry, and dried tobacco leaf spread throughout the mouth.
Fabulist is a brand co-produced by winemaker Kurt Shaklin of Saint-Liege/Groundwork, who specializes in Rhone varieties, and Andrew Jones of Field Recordings.
Jones, who is curious, spent his time studying vineyard cultivation plans and plantings until he set foot on every vineyard on the Central Coast. One day, he met Kurt Shaklin, a talented winemaker who approaches winemaking as if he were completing a work of art, and they immediately hit it off. Together, they listen to the voices of the vineyard and the grapes, harvest each bunch with gratitude, and work diligently on winemaking. Sharing the same values, the two were sure that this collaboration would be successful. They know that each wine has a story to tell. The wine whispered to them, and they listened to the story, until it was released from the barrel, poured into the bottle, and put into the hands of the customer.
They use grapes from estates in the Central Coast, mainly Paso Robles, that they know well. Many of their wines are vegan and contain minimal amounts of added SO2.
The label on each bottle is inspired by Aesop's fables. These are fables that Aesop, a slave in ancient Greece, told people around the 6th century BC, more than 2,500 years ago. Just as many fables have their own morals, they believe that every wine has a story to tell and a moral to convey. Wine has a profound power to inspire, deepen bonds with loved ones, and warm the heart. They hope that the thoughts that they put into their fabulist wines will reach someone who picks up a wine made by Shakulin and Jones today.
