This is not a typical "Pinot Noir"! The soil is calcareous and the air is relatively cool, but the Mediterranean climate means that the wine has a completely different expression from Burgundy. Nevertheless, it has the freshness and finesse that are also found in Burgundy. It is a dense and complex natural wine of the highest quality. It is brewed very naturally and simply, without adding any SO2. The wine is destemmed, crushed, and transferred to a tank, where it is macerated with the skins for one week. Fermentation begins naturally with wild yeast. It is then transferred to small French oak barrels that are 7 to 10 years old to finish fermentation and age for 12 months. It is bottled unfiltered.
