It goes well with meat dishes, especially steaks, and also goes well with seasonings that include a little herb.
TASTING
This is a concentrated red wine. It has a classic and complex aroma of black cherry, black plum, and ripe blackberry, followed by the aroma of spicy oregano. In the mouth, it has a good balance of lively fruitiness, ripe tannins (astringency), and moderate acidity, and the aftertaste lasts for a long time.
COMMENT
A new brand launched by Ernest Vineyards.
The Greek word "Edaphos" means earth, soil, or ground, and we chose it as the brand name because we felt it best represents the approach to winemaking at Edaphos, as Edaphos wines are a product of their place.
We focus on California's unique varieties and produce only small quantities based on the concept of "single variety, single vineyard."
WINEMAKING
Grenache from Steel Plow Vineyards, located in the heart of Sonoma Valley. The 4.5ha vineyard is planted with Rhone varieties such as Syrah, Mourvedre, and Viognier, but to realize the concept of Edafosse, only Grenache is used. Furthermore, only plots of clones that we felt could express the characteristics of the variety were selected. Aged in amphorae.
