DINING
It pairs particularly well with roast chicken or turkey, and also brings out the flavor of lean meats with a hint of herb.
TASTING
Floral and fruity. The aroma of red fruits intertwines with pine and wild herbs. In the mouth, the acidity is key, followed by very ripe tannins, and a rich flavor. This Pinot Noir exudes the high potential and wildness of the region where it is produced.
COMMENT
A new brand launched by Ernest Vineyards.
The Greek word "Edaphos" means earth, soil, or ground, and we chose it as the brand name because we felt it best represents our approach to winemaking, as Edafos wines are a product of their place.
Focusing on California's unique varieties, they produce only small quantities based on the basic concept of "single variety, single vineyard". For Ernest, this brand is like a "laboratory" where he enjoys experimenting with new and exciting approaches, while remaining confident in the quality and commitment.
The striking label was painted by the owner's grandmother, who used to live in Japan, and is inspired by Japanese paintings from the Edo period.
WINEMAKING
Located at the foot of the Oregon Coast Mountains, 5km from the famous Freedom Hill Vineyard, Giving Tree Vineyard is a slightly cooler region. Regular winds cool the vines and the growing season is longer, allowing the fruit to retain good acidity and produce wines that are suitable for aging. Aged in French oak (30% new barrels). Production volume 265cs.
