TASTING
As the name suggests, this wine has a beautiful feminine scent of white flowers, honeysuckle, and basil. The fresh fruit and white nectarine flavors are also impressive. The rich green tea nuances balance the citrus and stone fruit aromas.
COMMENT
Donkey & Goat Winery (donkey = donkey, goat = goat) is an urban winery run by female winemaker Tracy in Berkeley, San Francisco.
He studied winemaking in the Rhone region to master the basics of winemaking, and founded Donkey & Goat in 2001. Utilizing the time-honored traditional technique of "natural winemaking" he learned in France, he practices winemaking that makes the most of the grapes grown in the region.
It has now grown into one of California's leading wineries for "natural wine."
WINEMAKING
This wine expresses the terroir of Barsotti Vineyard, planted in 2011. The grapes were planted by Donkey & Goat themselves. 7% of the blend is macerated for 8-13 days. Fermented with natural yeast in oak barrels, then aged for 10 months in barrels.
