It goes well with meat dishes with a strong flavor, such as lamb, duck breast, and spare ribs. It also goes well with tuna marinated in soy sauce. For cheese, we recommend washed cheeses such as Epoisses.
COMMENT
Based in the village of Morey-Saint-Denis, this domaine owns 18 hectares in the Côte de Nuits. Frédéric, the fifth generation owner, has been proactively implementing biodynamic farming methods and improving the quality of his wines with his own unique methods, such as using wooden barrels and terracotta jars for aging. He is highly regarded by other winemakers and is one of the leading winemakers in the Côte de Nuits today.
This cuvée has been released since 2010. By using grapes from two different plots, "Aux Saules" and "Aux Ravioles", the delicacy of the Pinot Noir is beautifully brought out. The plot is made of old vines with an average age of 50 years. The estate owns only 0.3ha. Since the 2015 vintage, in addition to wooden barrels, about 50% of the wine has been aged in unglazed earthenware jars called "jars".
