DINING
Pair it with appetizers such as prosciutto, pate, and smoked duck. It also goes well with hamburger steak, pasta dishes with tomato sauce, and stews.
TASTING
The flavor of red fruits such as cherries and strawberries spreads lightly in the mouth. The moderate tannins give the mouth a fresh feeling and leave a pleasant aftertaste.
COMMENT
The AOC "Mâcon-Bray" is known only to a select few in France. The husband and wife team, who left the cooperative, do everything from cultivating the vines to brewing themselves. This is a Burgundy producer that is attracting attention, with most of their wines selling out in France after release.
As the name "Dangerous Hill" suggests, this wine is grown on a sunny, steep vineyard with a 30% gradient. It contains three sets of old Gamay vines planted in 1922, 1950, and 2000.
WINEMAKING
After harvest, the grapes are left in bunches for 15 days of maceration and carbonic fermentation. They are then aged in 600L wooden barrels for 9 months. The 2017 vintage was finished without the addition of sulfur dioxide.
