Chablis has a continental climate with hot summers and cold winters, and frequent frosts make it a difficult region for grape cultivation. While many producers leave more than 10 buds on each vine as a measure against frost damage, Drouhin stubbornly continues to reduce the harvest by leaving only eight buds in order to create a concentrated feel in the grapes. In addition, the harvested grapes are pressed at the winery's own winery (Moulin de Vaudon) in the Chablis region, and fermented and brewed in stainless steel in Beaune, resulting in a lively, elegant acidity and a fresh aroma reminiscent of mint and lemongrass.
