Fermented in stainless steel tanks, then barrel-aged (7-8 months with weekly lees mixing). From our own Walnut Wash Vineyard (Calistoga), this wine is full of purity, freshness and flavor. The aroma is a mix of tropical fruits (guava) and citrus grapefruit, the clean acidity is refreshing, and the mellow flavor spreads throughout the mouth, with a pleasant aftertaste of attractive tropical fruits.
Technical information
The stems are removed and the grapes are left to macerate (soak at constant temperature) for a day with dry ice. They are then gently pressed to prevent bitterness, and then fermented in stainless steel tanks. During barrel aging, the wine is mixed with the lees every week to add thickness, and after 8 months, it is lightly filtered and bottled.

Our own Walnut Wash Vineyard in Calistoga
A cold wind blows in from Sonoma, making it much cooler than you'd expect for Calistoga.
This preserves the acidity and gives the wine a fresh, lively flavor, and careful cultivation is carried out to protect the grapes from direct sunlight by providing shade with leaves, preventing them from burning.
