Pinot Noir from a single plot of their own vineyard, "Gloria". Their vineyard was originally Pinot Noir/Chardonnay planted by their mother 20 years ago. It is a perfect organic hill that has never used any pesticides since it was cultivated and has not been irrigated. Learning from the Pinot Noir, which was unstable because it rejected SO2, since 2016, they have been tasting the wine repeatedly and adding 7-15ppm SO2 when they feel that the wine is behaving in a slightly unsatisfactory manner (the 2016 Gloria is in a long sleep in the Wine Diamonds warehouse, not knowing when it will be woken up). A dramatic change was made in 2017, and that was the fermentation tank. Made from Jarrah (a type of eucalyptus that grows only in Australia with roots in Western Australia), it is fermented with 80% of the whole bunch in a 2400ml open-top barrel. It is finished in a semi-carbonic state with a full strawberry aroma. After aging in barrels for a little over six months from the MLF, the wine is transferred to stainless steel tanks for another seven months of aging before bottling. The mixed berry character is very strong, and the quality of the wine is very delicate. Because it is made from whole bunches, the color is gentle, and the tannins are very fine. The contact area between the liquid and oxygen in the large Jarrah barrels is much smaller than that of a typical barrique, and the wine itself has a very classic appearance. As with classic Barolo and Barbaresco, the liquid seems to have a shy and modest character. The umami of bonito flakes is also effective, and the finish is very good.
