COMMENT
André Bonnot is a family-run maison founded by Xavier Bonnot in Saint Lothain in 1936, and has been in business for four generations. The Bonnot family motto is to protect the tradition of winemaking while working with an entrepreneurial spirit. The family continues to challenge themselves to create higher quality wines, respecting both "traditional methods" and "modern technology".
WINEMAKING
Alcoholic and malolactic fermentation is carried out for each variety in stainless steel tanks. After that, the wines are transferred to wooden barrels and aged for 24 months without any additional wine, covered with a yeast film on the surface. They are then blended in stainless steel tanks and bottled.
