From five cool Sonoma Coast vineyards, Clone 1 and Mousquet clones are used. Fermented and aged for six months in French barrels (used for several years). Subtle notes of passion fruit, guava, grapefruit, and crushed rocks. The nuances of the wine are highly fragrant, and the aroma is surprisingly fresh and pure, spreading throughout the mouth. It has a youthful, rich flavor. Several years of barrel aging have brought out the individuality of the varieties, which harmonize beautifully with the refreshing acidity. It pairs well with buffalo cheese, herb-flavored cheese, sardines in oil, grilled fish or chicken with simple sauces, and spicy ethnic and Mexican dishes.

Harvest: The grapes are harvested in the cool of dawn and immediately brought to the winery for sorting.
Winemaking: The grapes are carefully selected by hand, then gently pressed. The juice is left to settle overnight to remove any large sediments, and then carefully transferred to French barrels (used for several years) to begin fermentation. During fermentation, particular attention is paid to ensuring that the unique and rich aroma of Sauvignon Blanc is preserved.
Aging: Aged for 6 months with selected high-quality lees in French barrels (used for several years).
