From five cool Sonoma Coast vineyards, Clone 1 and Mousquet clones are used. Fermented and aged for six months in French barrels (used for several years). Subtle notes of passion fruit, guava, grapefruit, and crushed rocks. The nuances of the wine are highly fragrant, and the aroma is surprisingly fresh and pure, spreading throughout the mouth. It has a youthful, rich flavor. Several years of barrel aging have brought out the individuality of the varieties, which harmonize beautifully with the refreshing acidity. It pairs well with buffalo cheese, herb-flavored cheese, sardines in oil, grilled fish or chicken with simple sauces, and spicy ethnic and Mexican dishes.

Food Pairing: Pairing suggestions from Viviana

Cheese: Cow's milk cheeses flavored with garlic and herbs, such as Boursin, and goat's cheeses, such as Tomme de Chevre Aedius.

Fish: Grilled, especially oily fish like sardines and mackerel, garlicky shrimp, charcoal-grilled squid.

Chicken: Grilled chicken or lamb with a bold marinade or creamy sauce.

Tacos: International cuisine including Japanese, Mexican and Mediterranean.
