From three vineyards, from Russian River Valley to West Sonoma Coast, we use clone 4, 95 and Old Wente. Fermented and aged for 8 months in French barrels (used for several years). It has a youthful greenish lemon and straw color, and is full of refreshing aromas of pear, lime peel, pear and watermelon. The flavor is enhanced by nuances of honeyed apple and lemon cream pie, and the complex aftertaste is impressive, with lively acidity and salty minerality. It goes well with grilled vegetables, corn, pumpkin soup, spicy shellfish and chicken, risotto and gratin.

Harvest: The grapes are picked in the cool hours of dawn and brought immediately to the winery in the cold for sorting.
Brewing: After soft squeezing, the juice is allowed to settle overnight to remove any large sediments, then carefully transferred to 225L French barrels (used for several years) for fermentation and aging.
